Giant Eclair Pie

This is one of my favorite desserts that always reminds me of the holidays.  It’s super simple to make and delicious.

INGREDIENTS

  • Graham Crackers

Filling

  • 1 Large Package of Cool Whip
  • 2 Boxes of French Vanilla Pudding Mix 

Chocolate Icing

  • ½ bar German’s baking chocolate
  • 3 Tbsp Milk
  • 3 Tbsp Butter
  • 1 Tbsp white Karo syrup
  • 1 ½ cup Powdered Sugar

DIRECTIONS

  1. Line baking dish with graham crackers
  2. Mix pudding mix according to directions on package
  3. Fold Cool Whip into pudding
  4. Spread ½ of mixture onto graham crackers
  5. Add another layer of graham crackers
  6. Spread another layer of pudding mixture
  7. Add third and final layer of graham crackers
  8. Add icing:
  9. Melt chocolate with butter, milk and Karo syrup.
  10. Beat mixture with powdered sugar
  11. Spread icing onto top layer of graham crackers
  12. Refrigerate for a few hours before serving
