My Granannie’s wafers – it’s the recipe that checks all the boxes. Holiday tradition. Family memories. Downright deliciousness. It’s a secret family recipe, of course. One that I have not mastered and will not carry on. Thankfully, my great grandmother’s recipe survived and bypassed the non-cooks in my family (my grandmother and me) and was carried on by my great aunt who passed it along to my sister who passed it on recently to my second oldest child.
When the holidays roll around, my sister and her niece work tediously in the kitchen rolling batches of these delicate wafers, burning the tips of their fingers as they go. These crispy and light wafers, with a hint of licorice from the star anise extract, are the perfect ending to the year and the ringing in of a new one –surrounded all by family.
Ingredients
- Stick of butter, melted
- Egg + yolk
- Vanilla extract
- Sugar
- Flour

Teaspoon to dip batter
Cooling racks
Oiled paper towels for iron
Directions
Mix wet & dry ingredients separate, then combine until batter is thick
