I made the mistake of trying to accomplish this recipe with a three month old in tow! It was a challenge, but very rewarding. Perfect if you want something a bit more sophisticated than an average pumpkin pie!

Hilly’s Pumpkin Caramel Pie Recipe

A nod to a classic pumpkin pie, with a twist! This pumpkin ganache caramel pumpkin pie is a sure stunner for your Thanksgiving table this year. 

Ingredients 

  • recipe caramel
  • recipe pie crust
  • recipe pumpkin ganache
  • recipe streusel
  • pint heavy cream (optional: sweeten your whipped cream with 2 Tbsp confectioners sugar and a dash of vanilla extract if desired)

Assembly

  1. pour room temp (or slightly reheated) caramel into base of pie shell so the base is fully covered and level — place filled shell into fridge to firm up for 20 – 25 minutes.
  2. pour ganache over caramel and spread using offset spatula or spoon to make sure all caramel is covered. 
  3. place in fridge ASAP, covered,  to fully set — 4 – 5 hours, or ideally overnight. ganache should feel firm to the touch, should not stick to your fingers, and feel solid all the way through.
  4. serve pie cold, directly out of the fridge. top with fresh whipped cream, and streusel to serve.
